Cassava Puffs Recipe

Cassava puffs

Ingredients:
500g cassava
1 egg
25g margarine
White pepper and salt to taste
5g baking power
oil for frying

Instructions:
Boil cassava and while hot crush until smooth.
Add lightly beaten egg,margarine,pepper and salt and baking powder.
Mix thoroughly.
Form into small balls and coat with flour.
Fry in hot oil until brown.
Drain and serve.

N.B. The same method can be used for eddoes and hard yam.
Chopped cooked meat,well seasoned,may be used for a stuffing before frying.
